Easy Instapot Beef & Broccoli

Taste like Chinese take out with no hidden ingredients or extra fats and sugars!

This is one of my favorite dishes to make for lunch because the prep time is short but the taste and satisfaction are amazing.


2lbs beef chuck roast or flank steak cut into small pieces or thin strips

1/2 tbsp of EVOO or avocado oil

1/3 cup soy sauce

2/3 cup water

2 tbsp brown sugar

1lb broccoli florets (fresh or frozen)

4 cloves of garlic (or a couple of tbsps of minced garlic)

1 inch piece of fresh ginger or tsp of ground ginger

3 tbsp cornstarch + 1/4 cup hot water


  • Put soy sauce, 2/3 cup of water, brown sugar, garlic and ginger in a food processor or blender and process until smooth.

  • Set the instapot to sauté and 1/2 tbsp add EVOO or avocado oil.

  • Season the beef with a little salt and when the oil is hot, add it to the instant pot. Sear the meat pieces for about 3-4 minutes each side (or until the outside of the meat is mostly brown with very little pink showing).

  • Pour soy sauce mixture over it. Toss with tongs to make sure all the beef is coated with sauce.

  • Close the lid of the instant pot and set the valve to a sealing position. Press the "Pressure Cook" or "Manual" button and set the time for 40 minutes on High pressure.

  • When the beef is done cooking, quick release the steam.

  • Place the broccoli in the microwave for 3-4 minutes (5 if frozen).

  • Once the pressure is released, turn off the instant pot and turn it on again on "sauté." Set the time for 15 minutes.

  • In a cup, mix the cornstarch and the 1/4 cup of hot water. Add the cornstarch mixture to the Instant Pot and mix until combined. Allow the beef mixture to come to a boil and gradually thicken (in about 5 minutes).

  • Stir the cooked broccoli into the beef mixture. And you're ready to enjoy!

I like to serve it with an equally easy and healthy brown fried rice!


2 cups of instant brown

1 cup of peas (fresh or frozen)

1/2 cup of chopped carrots

2-3 eggs

1/2 tbsp of EVOO or avocado oil



  • Prepare the rice according to package instructions.

  • Heat a frying pan with 1/2 tbsp of EVOO or avocado oil on high heat.

  • When the oil is hot, crack the eggs into the frying pan. Add salt. Let them cook for a minute or two, and when the whites go from clear to white, stir the eggs around to make a scramble.

  • Before the eggs are fully cooked through, lower the heat to medium, and add in the rice and stir until combined.

  • Then add in the peas (thaw them in the microwave first, if they're frozen), and the carrots.

  • Stir until everything is combined, and remove from heat.

  • You're ready to top your fried brown rice with your beef & broccoli and enjoy!
